I feel under qualified for most jobs

Right now I don't have an engineering job, working as a math teacher (I have a BS in Applied math and ME). However, I am tired of being a teacher and I feel under qualified for everything whenever I apply to engineering jobs. Most places require X experience or Y years using Z software, etc. Is this normal? To just apply to jobs you are not qualified for?

All the experience I have is Solidworks from school and some projects using Matlab/ANSYS. It has been so long since I graduated that I don't even feel confident putting these on my resume since I forgot most of it (graduated 4 years ago).

Any tips ? Should I just keep applying to stuff I'm not qualified for and hope they don't asked me to do something I don't remember how to do? I'm sure I can figure it out once there but I'm not sure how companies take to that
